With winter approaching in a few months, we wanted to share a quick guide on the upcoming lobster season here in the Cayman Islands. Whether you are planning to head out on the water or just looking forward to ordering Cayman lobster at a local restaurant, here is a quick breakdown of the dates, the species, and the strict rules to keep in mind.

Season Dates


The annual lobster season in the Cayman Islands opens on 1 December and closes on the last day of February. This strict three-month harvesting window is heavily regulated by the Cayman Islands Department of Environment to ensure the long-term sustainability of local marine stocks.


The Target Species


The only species permitted for harvest in Cayman waters is the Caribbean spiny lobster (Panulirus argus). Unlike their cold-water Maine counterparts, these tropical crustaceans are clawless invertebrates. They rely instead on long, powerful antennae and sharp outer spines for defense. Highly prized for their sweet and tender tail meat, spiny lobsters are an essential pillar of traditional Caymanian culinary heritage.


Strict Environmental Regulations


Poaching or harvesting outside the designated window is a major offense under the National Conservation Act. Violators face steep judicial penalties, including potential prison time and heavy fines up to CI$500,000.


To protect the ecosystem, the government enforces the following constraints during the open season:


Catch Limits: Fishers are strictly capped at three lobsters per person per day, or six lobsters per boat per day, whichever number is less. Restaurants can only have 3 lobsters in their fridge at any one point.


Size Restrictions: Any captured lobster must have a minimum tail length of six inches.


Gear Rules: Catching lobsters using SCUBA gear, spears, hook sticks, or gloves is illegal. Divers must rely on hand-held lobster snares, which allow undersized individuals to be safely released unharmed.


Location Limits: Absolutely no lobster harvesting is permitted inside designated Marine Protected Areas.


A Culinary Tradition


When the season is active, fresh catches immediately appear on menus across the islands, from beachfront shacks like the Eastern Star Bar & Fish Fry to upscale waterfront venues like Union Grill in Camana Bay. The most celebrated preparation is Cayman-style lobster. This traditional dish features fresh tail meat lightly sautéed with butter, sweet bell peppers, onions, garlic, and scotch bonnet peppers. It is typically served alongside rice to absorb the rich local flavors. Other more upscale chef preparations include lobster thermidor, lobster risotto and lobster cocktail.


Cayman Islands lobster season runs from 1 December to the last day of February. The only legal catch is the clawless Caribbean spiny lobster. Strict limits apply: max 3 per person/6 per boat daily, minimum 6-inch tail length, no SCUBA gear or spears allowed, and zero harvesting in Marine Protected Areas.
