How Union Won The Prestigious AAA 4-Diamond Award

In July 2026 Union Grill was awarded the acclaimed AAA 4-Diamond award. So we thought it would be useful to explain a little more about the award, what Union had to do to meet the exacting standards that AAA require, and the impact the award may have on our business.


Earning the AAA Diamond Program 4-Diamond award requires a restaurant to deliver 'distinctive fine dining with upscale surroundings, creative menus, and flawless consistency' (according to AAA themselves). Only about 2.1% to 2.3% of evaluated restaurants achieve the 4-Diamond rating, and Union is now the only steak-led restaurant in the entire Caribbean region with this award. For Union, winning this honor demanded intense preparation, strict operational standards, and a deep and consistent commitment to hospitality. 


So What's Involved and How Does The Process Works


Restaurants do not formally "apply" with a long written entry for the AAA Diamond awards, and it is not a 'paid-for' accolade. Instead, any establishment that meets basic AAA requirements is automatically evaluated or can request consideration through the AAA Diamond Program. Professional, trained inspectors visit restaurants unannounced. They evaluate the restaurant based on 3 main categories:


  • Food (accounts for 50% of Diamond designation): top-quality ingredients, creative chef-driven menus, and artistic presentation.

  • Service (accounts for 35% of Diamon designation): highly polished serving staff with detailed food and beverage knowledge, delivering meticulous hospitality standards

  • Vibe (accounts for 15% of Diamond designation): upscale, well-coordinated interior design, ambiance, lighting, and seating.


According to AAA, a 4-Diamond restaurant guest will encounter an executive chef producing complex menus, professional service staff with a deep understanding of the food and beverage offering, and delivering exceptional attention to detail during every course. 


The Daily Work and Preparation


For us here at Union preparing for 4-Diamond rating meant many months of treating every single service like an audit. Because inspections are unannounced, our staff could not turn on "special behaviour" for a specific critic. We had to achieve excellence everyday without compromise, and with every guest at the heart of our service, never knowing who the inspector may be or when they would book their table.


  • Staff Training: our front-of-house employees practiced precise timing, such as honoring reservation windows within ten minutes, initiating warm greetings immediately upon seating, and knowing the menu down to the provenance of every ingredient.

  • Kitchen Rigor: our back-of-house teams focus on what we call 'zero-defect' execution (aka no mistakes), strict food safety, and elevated plating standards.

  • Facility Upkeep: our management team continually inspected physical decor, table settings, and lighting to ensure an exclusive upscale atmosphere without any visible wear and tear.

Earning 4-Diamonds changes everything for Union. It instantly evelvates our market position and intensifies our goal of delivering outstanding hospitality every single minute of the daily operation. There is now heightened scrutiny from the guest and a greater expectation of the highest possible standards.
