In the pursuit of culinary excellence, the Head Chef of Union Grill in Grand Cayman, Aldo Pedraza, sources ingredients from across the globe. We have listed some of the major ingredients below. Enjoy exploring our menus and we look forward to serving you soon.


Angus Steaks

The main steak cuts on the dinner menu at Union are sourced from Certified Angus Beef herds in the USA. We also feature Silver Fern Farms for our 16oz grass-fed rib-eye from New Zealand. Each cut is carefully selected for its flavor and tenderness.


Wagyu Steaks

Our 8oz Wagyu tenderloin comes from Black Opal in Australia. The 14oz Wagyu New York Strip is sourced from Lake Preston Beef in Australia. These premium cuts offer a rich, buttery flavor that melts in your mouth.


Fresh Fish & Seafood

Most fresh fish served at Union is sourced from local Cayman fishing boats. We proudly serve snapper, yellowfin tuna, and wahoo. Our Spanish octopus is imported from Central American countries, while wild-caught scallops come from the USA. Additionally, we import mussels from Prince Edward Island, Canada, and salmon from the cold waters of Chile.


Lobster Delights

Union sources Caribbean lobster from Costa Rica, Honduras, and Panama. During Cayman's spiny lobster season, which runs from December 1st to February 28th, we purchase from local fishermen. Oysters

We purchase Blue Point oysters from Long Island Sound, USA. These oysters are known for their briny flavor and firm texture, making them a perfect addition to our seafood offerings.


Caviar

Union features Oscietra and Beluga caviar throughout the year. These luxury caviars are sourced from the premium Italian producer Giaveri. Each spoonful offers a taste of indulgence that elevates any dish.


Supporting Local Farmers

Union is proud to support local growers and producers. We buy a variety of items from Caymanian farmers, including mushrooms, tomatoes, micro herbs, lettuces, mangoes, avocados, wasabi, cabbage, eggs, and sourdough bread. This commitment to local sourcing ensures freshness and quality in every dish we serve.
